The Associazione Verace Pizza Napoletana, guardians of the purity of Neapolitan pizza, carefully oversees the traditional methods used to produce the original pizza. In December 2017, this craft was recognised as a UNESCO Intangible Cultural Heritage. Using 270 grams of dough and a maximum diameter of 35 centimetres, the BESTIA team bakes Neapolitan pizza exactly as it was made over 200 years ago.
